Carrot Peanut Butter Dog Cake

It’s Sherlock’s 3rd Birthday!!!  Of course he’ll have cake!  (And, new pajamas!)   This year I wanted to combine carrots and peanut butter.  Carrots and peanut buter are two things he goes cuckoo for.  Every afternoon when I’m peeling or chopping carrots in the kitchen he’ll come flying in, perfectly sit next to me and wait for his snack (he gets one whole carrot a day.)  The same goes for if anyone in the house opens the jar of peanut butter.  He could be on his back, paws in the air, and snoring, but he’ll hear the jar and bounce into the kitchen.  Sadly, he doesn’t always get to lick the peanut butter spoon, it depends on who it is.  Obviously, if it’s me he’s lickin’ the spoon!

Carrot Peanut Butter Dog Cake
1 cup white flour (I substituted wheat flour)
1 tsp baking soda
1/4 cup peanut butter
1/4 cup vegetable oil
1 cup shredded carrots (it was one medium organic carrot tonight)
1 tsp vanilla
1/3 cup honey (only local honey in this house, it’s good for the whole family)
1 egg
Mix flour and baking soda together and then add all other ingredients.
Bake at 350* for 30-40 minutes.

I separated a little less than half to bake for Sherlock’s birthday cake.  The remainder I split into 6 muffins.  The muffins will be cooled and then frozen for later treats.  I’m all about making extra to enjoy another day.  Besides one whole cake would be insane.
6 to freeze for future desserts and one for tonight’s celebration!


I will be skipping any frosting.  And, before you think – aww poor guy, his favorite really is whipped cream.  So, whipped cream he will have!
